Buckeye Blends Peas and Potatoes with Basil

- Heat the half olive oil in a large pot over medium heat.
- Sauté the onion and garlic with a pinch of salt until soft.
- Add carrots, potatoes, and tomato; stir and sauté 2 to 3 minutes.
- Add water, bring to a boil, and cook uncovered for about 15 minutes.
- Add the peas, fresh dill, basil, and the remaining olive oil, and season with salt and pepper to taste
- Reduce heat to low, and simmer for 10 to 12 minutes.
- Taste and adjust seasonings.
