Buckeye Blends Pasta with White Mushrooms and Parmesan-Herb Blend

Ingredients

  • 1/2 cup of Arbequina Extra Virgin Olive Oil
  • 2 cloves of garlic mashed
  • 1 cup of white mushrooms
  • 1 large carrot grated
  • 1 tsp of fresh parsley
  • 1 tsp of oregano
  • 6 Tbsp water
  • salt and ground pepper to taste
  • 1 lb. pasta (any)
  • Parmesan-Herb Blend for serving

Instructions

  1. Heat oil in a pan over medium-high heat.
  2. Sauté garlic and white mushroom for one minute.
  3. Add the carrot, parsley, oregano, water, salt, and pepper.
  4. Reduce the heat to low and cook for 10 to 12 minutes over medium-low heat.
  5. Cook the pasta as per the manufacturer's instructions, drain, and season with salt and pepper to taste.
  6. Rinse pasta and place it onto a large serving plate.
  7. Cover with vegetable mixture and drizzle with Parmesan-Herb Blend.
  8. Serve.
