Honey-Lemon Roasted Chicken

Ingredients

  • 5 lb. chicken, cleaned
  • 1/2 cup of Meyer Lemon Olive Oil
  • 2 cloves garlic minced
  • Grated zest of 3 lemons
  • 2 Tbsp lemon juice
  • 2 Tbsp rosemary
  • ½ tsp paprika
  • Salt and black pepper to taste
  • 1/2 cup of strained honey
  • 1 cup of plum wine or vermouth

Instructions

  1. Place the chicken in a large container.
  2. Mix the Meyer Lemon Olive Oil, garlic, lemon zest, lemon juice, rosemary, paprika, salt, and pepper in a separate bowl.
  3. Coat and rub the chicken with the Meyer Lemon Olive Oil mixture.
  4. Cover and refrigerate overnight.
  5. Preheat the oven to 425 F.
  6. Place chicken in a roasting pan and roast for 30 minutes.
  7. Turn the meat, brush with honey, and pour the wine; roast for 15 minutes.
  8. Reduce the heat to 350 F and roast for about one hour.
