Roasted Rice with Chives and Garlic

Ingredients

  • ½ cup of Garlic California Extra Virgin Olive Oil
  • 1 large onion finely chopped
  • 2 to 3 cloves garlic minced
  • ¼ cup of chives, finely chopped
  • 2 cups of rice
  • 2 cups vegetable broth
  • 1 Tbsp fresh parsley finely chopped
  • 1 cup of water
  • 1 grated tomato
  • 1 cup of water
  • 3 Tbsp fresh celery, finely chopped
  • Salt and ground black pepper to taste
  • Fresh lemon juice

Instructions

  1. Preheat the oven to 400 F.
  2. Heat olive oil in a baking dish and sauté onion, garlic, and chives with a pinch of salt and pepper until soft.
  3. Add all remaining ingredients and stir well.
  4. Cover with foil and bake for 50 to 60 minutes or until the liquid is absorbed and the rice is tender.
  5. Taste and adjust seasonings.
  6. Serve warm with lemon juice.
