Crushed Garlic and Potato Mashers

Buckeye Blends Crushed Garlic and Potato Mashers

  • 1 1/2 lb. potatoes, peeled and cut into cubes
  • 2/3 cup of Garlic California Extra Virgin Olive Oil
  • 4 Tbsp Traditional White Balsamic Vinegar
  • 4 cloves garlic minced
  • salt and freshly ground pepper to taste
  • 2 Tbsp fresh parsley, finely chopped


  1. Bring the water to a boil in a large pot on medium-low heat.
  2. Cover and let simmer for about 15 to 20 minutes; drain and cool.
  3. Mix the oil, vinegar, garlic, salt, and pepper in a large bowl.
  4. Add potatoes to a large bowl and mash them.
  5. Add the garlic mixture and mix until combined well.
  6. Taste and adjust salt and pepper.
  7. Sprinkle with parsley and serve.
