Cheesy Chicken Lasagna Casserole

  • 4 Tbsp Basil California Extra Virgin Olive Oil
  • 1 onion finely chopped
  • 1 lb. chicken meat minced
  • 1 can of tomato juice
  • 1 Tbsp Italian seasoning
  • 1 lb. of mozzarella grated
  • 1 1/4 cups ofcream
  • 1 Tbsp fresh basil finely chopped
  • Salt and freshly ground pepper to taste


  1. Preheat the oven to 375 F.
  2. Cook lasagna al dente according to package directions; rinse and drain.
  3. Heat Basil California Extra Virgin Olive Oil in a frying skillet overmedium heat.
  4. Sauté onion and brown the minced chicken.
  5. Add the tomato juice, Italian seasoning, salt, and pepper, and cook for about 2 minutes.
  6. Mix the cheese, cream, and basil in a separate bowl.
  7. Add 1/2 cup of meat sauce to a 9x13 greased casserole.
  8. . Top with three lasagna noodles and sprinkle the cheese mixture over that.
  9. Repeat twice more, and finish with three noodles topped with the remaining sauce.
  10. Cover with the foil and bake for about 40 to 45 minutes.
  11. Sprinkle with some more cheese, uncover and bake for 15 minutes.
