Dairy-free Pasta with Vegetables and Sesame

Buckeye Blends Dairy-free Pasta with Vegetables and Sesame

Ingredients

  • 1 lb. pasta (any)
  • 1/3 cup of Arbequina Extra Virgin Olive Oil
  • 1 small onion
  • 1 cup of grated tomatoes
  • 1 cup of fresh baby leaves chopped
  • 1 red pepper sliced
  • 1/2 cup of olives (chopped)
  • Salt and ground pepper to taste
  • 4 Tbsp sesame seeds

Instructions

  1. Boil pasta as per package's instructions; drain in a colander.
  2. Heat Arbequina Extra Virgin Olive Oil in a large skillet over medium heat.
  3. Sauté the onion with a pinch of salt until soft.
  4. Add the tomatoes and spinach; stir for about 2 minutes.
  5. Add red pepper and olives; cook for 3 minutes.
  6. Add the pasta, salt, and pepper and stir well.
  7. Sprinkle with sesame and serve.
