Buckeye Blends Zesty Bok Choy Salad

Ingredients
- 2 lb. Bok Choy chopped (or green cabbage)
- 2 cloves garlic, minced
- 1 red pepper sliced
- 1/2 can of corn (15.25oz)
- 1 tsp crushed paprika
- 4 to 5 Tbsp Habanero California Extra Virgin Olive Oil
- 1 tsp crushed paprika
- Salt and ground pepper to taste
- 2 Tbsp fresh parsley
Instructions
- Rinse and chop the Bok Choy; place it into a large salad bowl.
- Add the garlic, red pepper, and corn; toss.
- Season with paprika, Habanero California Extra Virgin Olive Oil, salt, and pepper; gently stir.
- Sprinkle with fresh parsley and serve.
