Buckeye Blends Beetroot Fig Balsamic Sauce

- 2 cups of canned beetroot, drained and cut into small cubes
- 1 cup of water
- 3/4 cup of onion finely chopped
- 1/2 cup of Arbequina Extra Virgin Olive Oil
- 4 Tbsp Fig BalsamicVinegar
- Salt and ground pepper to taste
- Place all ingredients in a high-speed blender.
- Blend until smooth and creamy.
- Keep refrigerated in a sealed jar for up to 5 days.
- Serve cold with poultry, rice, or pasta.
