Blood Orange Cake

Buckeye Blends Blood Orange Cake

Ingredients

  • 1 tsp butter softened
  • 6 eggs from free-range chickens
  • 2 cups of granulated sugar
  • 1 cup of Blood Orange Olive Oil
  • 1 lb. self-rising flour
  • 1 cup of fresh orange juice
  • 2 Tbsp orange zest

Instructions

  1. Preheat the oven to 360 F.
  2. Grease a Bundt pan or loaf pan; set aside.
  3. In a mixer bowl fitted with the whisk attachment, mix the eggs with the sugar for about 5 minutes.
  4. Add the olive oil, and mix (low speed) for one minute.
  5. Add the orange juice and orange zest; mix for one minute.
  6. Add flour and mix just until combined.
  7. Pour batter into prepared baking pan.
  8. Bake (at middle oven rack) for about 60 minutes.
  9. Remove from the oven and allow the cake to cool completely on a wire rack
  10. Slice and serve.
