Ingredients

  • 3 eggs, organic
  • 1/3 cup of Arbequina Extra Virgin Olive Oil
  • 3zucchinis shredded
  • 1/2 cup of sugar
  • 1 1/2 cup almond flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/2 cup almonds finely chopped

Instructions

  1. Mix the eggs, Arbequina Extra Virgin Olive Oil, zucchini, and sugar in a bowl.
  2. Mix the flour, salt, baking soda, and cinnamon in a separate bowl.
  3. Add the eggs mixture to the flour and stir well.
  4. Add thealmonds and mix until all ingredients combine well.
  5. Preheat the oven to 350 degrees F.
  6. Grease an 8-inch loaf pan, and line it with parchment paper.
  7. Pour the batter into the pan.
  8. Bake for about 35 to 40 minutes.
  9. Remove from the oven and allow it to cool before slicing.
